Materials:
• 12 dried eggplants
• 12 dried peppers
• 2-3 pieces of fleshy bone
• 500 g medium-fat minced meat
• 3 pieces of onion (chopped)
• 400 g of Zer rice
• 1 teaspoon black pepper
• 1 teaspoon paprika
• 7 garlic cloves (chopped)
• 1 tablespoon of Zer pepper paste
• 1 tablespoon Zer tomato paste
• 1 cup Zer olive oil
• 1 teaspoon of Zer lemon salt or lemon juice
• Zer salt (according to desire)
Sauce Ingredients:
• 2-3 tablespoons Zer tomato paste
• 1 tablespoon of Zer pepper paste
• 1 tablespoon Zer granulated sugar
• 2 tablespoons butter
• 1.5 cups hot water
Its making:
1. Preparation of Dried Eggplants and Peppers:
• Boil the dried eggplants and dried peppers in hot water for 10-15 minutes and drain when tender. Keep it on the sidelines.
2. Preparation of the Interior Mortar:
• Heat the Zer olive oil in a frying pan. Add the chopped onions and fry until pink. Then add the minced meat and continue roasting until the juice is drained.
Add the chopped garlic, Zer pepper and tomato paste and mix. Then add the rice. Add black pepper, paprika and Zer lemon salt (or lemon juice). After mixing, add 1 cup of water and cook over low heat until the rice is half cooked. Leave the mortar to cool.
3. Filling of Dolmas:
• Fill the mortar you have prepared into the dried eggplants and peppers, do not fill it too tightly, because the rice will swell while cooking. Place the stuffed animals upright in a saucepan, place the meaty bones at the bottom of the pan.
4. Preparation of The Sauce:
• Melt the butter in a frying pan. Add the Zer tomato and pepper paste and fry. Then add the granulated sugar and slowly add 1.5 cups of hot water and prepare the sauce.
5. Cooking:
• Pour the sauce you have prepared over the stuffed ones. Cover the lid of the saucepan and cook the stuffed animals over low heat for 40-45 minutes, until the rice is thoroughly cooked. Add a little more water during cooking if necessary.
6. Service:
• Serve the dried eggplant and stuffed peppers hot. You can serve it with yogurt on the side.
